Spooky Ghost Meringue Cookies: Easy Halloween Treat Bags

These spooky ghost meringue cookies are light, crispy, and melt in your mouth like a sweet little cloud. They’re ridiculously easy to make with simple ingredients and are perfect for Halloween treat bags, parties, or spooky movie nights.

  • 4 large egg whites, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 cup (45g) mini chocolate chips
  • Optional: sanding sugar or edible glitter

Instructions

  1. Preheat oven to 200°F (95°C). Line a large baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, add room temperature egg whites and cream of tartar. Beat on medium speed until foamy and soft peaks form, about 2-3 minutes.
  3. With mixer running on medium-high, add sugar one tablespoon at a time, taking about 5-7 minutes total. The mixture will become glossy and thick.
  4. Increase speed to high and beat for another 2-3 minutes until stiff, glossy peaks form. Rub a little between your fingers; if it feels gritty, keep beating until smooth.
  5. Beat in vanilla extract on low speed for about 10 seconds, just until combined.
  6. Transfer meringue to a piping bag fitted with a round tip (or a zip-top bag with a corner snipped off). Pipe small dollops onto prepared baking sheet, about 1.5 inches wide and 2 inches tall, leaving 1 inch between each ghost.
  7. Gently press two mini chocolate chips into each ghost for eyes, placing them close together near the top.
  8. Bake for 60-75 minutes until meringues are dry to the touch and easily lift off the parchment. They should not be brown.
  9. Turn off oven and leave ghosts inside with door slightly ajar for 30 minutes. Transfer to a wire rack to cool completely.

Notes

For best results, use room temperature eggs and add sugar slowly. Avoid making meringues on humid days. Do not open the oven during baking. Make extra ghosts as they are fragile. Store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
