This easy no-churn pumpkin spice ice cream is creamy, spiced, and requires no ice cream maker. Made with simple pantry ingredients, it’s the perfect fall dessert that rivals anything from the store.

  • 2 cups (480 ml) heavy cream
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 3/4 cup (170 g) pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup graham cracker crumbs
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/4 cup caramel sauce
  • Optional: 1 tablespoon bourbon

Instructions

  1. Chill your mixing bowl and whisk attachment in the freezer for 15 minutes.
  2. Pour 2 cups of cold heavy cream into the chilled bowl. Beat on medium speed for 1 minute, then increase to medium-high speed until stiff peaks form (3-5 minutes).
  3. In a separate bowl, whisk together sweetened condensed milk, pumpkin puree, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Add one-third of the whipped cream to the pumpkin mixture and fold gently with a rubber spatula. Add the remaining whipped cream in two batches, folding until no white streaks remain.
  5. If using optional mix-ins, gently fold them in now.
  6. Spoon the mixture into a 9×5 inch loaf pan or freezer-safe container. Smooth the top and tap gently to release air bubbles.
  7. Press plastic wrap directly onto the surface of the ice cream, then cover with a lid or foil. Freeze for at least 6 hours, preferably overnight.
  8. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften. Scoop with a warm ice cream scoop.

Notes

For best texture, ensure cream is very cold and whipped to stiff peaks. Drain any excess liquid from pumpkin puree if watery. Press plastic wrap directly onto the surface to prevent ice crystals. The ice cream keeps for up to 2 weeks in the freezer.
