  • 1/2 cup (1 stick) unsalted butter, melted
  • 34 medium ripe peaches, peeled and sliced (about 2 cups)
  • 1 tablespoon granulated sugar (optional, if peaches are tart)
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving overhang on two opposite sides. Grease the pan if not using parchment.
  2. In a medium mixing bowl, combine the entire box of yellow cake mix with the melted butter. Stir until the mixture is crumbly and resembles wet sand.
  3. Reserve about 1 cup of the crust mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared baking dish.
  4. If peeling peaches, blanch them in boiling water for 30 seconds, then transfer to an ice bath. Slip off the skins. Slice peaches into thin wedges (about 1/4-inch thick). Pat dry if very juicy.
  5. Arrange the peach slices evenly over the pressed crust. Sprinkle with sugar and cinnamon if using.
  6. Sprinkle the reserved crust mixture evenly over the peaches. Do not press down.
  7. Bake for 35-40 minutes, until the top is golden brown and the filling is bubbly around the edges. Tent with foil if browning too quickly.
  8. Cool completely in the pan on a wire rack for at least 1 hour (or refrigerate for 30 minutes for cleaner slices).
  9. Use the parchment overhang to lift the bars out of the pan. Slice into 9 or 16 squares with a sharp knife, wiping clean between cuts.

Notes

For best results, use a standard yellow cake mix (not ‘butter recipe’ or ‘extra moist’). Press the bottom crust firmly to prevent sogginess. Pat peaches dry if very juicy. Cool completely before slicing for clean bars. Bars taste even better the next day.
