  • ½ teaspoon salt
  • ½ cup (60g) chopped walnuts, toasted

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the butter. Stir frequently as it foams and then turns golden brown with a nutty aroma. Remove from heat and set aside to cool slightly.
  2. Prep the bananas: While the butter cools, mash the ripe bananas in a large bowl until mostly smooth with a few small lumps remaining.
  3. Mix wet ingredients: To the mashed bananas, add brown sugar, eggs, vanilla extract, and the cooled browned butter. Stir until combined but don’t overmix.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
  5. Fold dry into wet: Gradually add the dry ingredients to the wet, folding gently with a spatula until just combined. Stop as soon as there are no flour streaks to avoid tough bread.
  6. Add walnuts: Fold in the toasted walnuts, reserving a few to sprinkle on top if desired.
  7. Prepare baking pan: Grease a 9×5 inch loaf pan well or line it with parchment paper.
  8. Bake: Pour batter into the pan and bake at 350°F (175°C) for 55-65 minutes. Check doneness at 55 minutes by inserting a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool: Let the bread cool in the pan on a wire rack for at least 20 minutes before slicing.
