A creamy, cheesy, and spicy slow cooker queso dip loaded with seasoned ground beef, jalapeños, and fresh toppings. Perfect for parties and easy to prepare.

Ingredients

  • 8 oz cream cheese, softened
  • 16 oz Velveeta cheese, cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 lb ground beef, cooked and seasoned
  • 12 jalapeños, diced (remove seeds for less heat)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 2 stalks green onions, sliced
  • A handful cilantro, chopped (optional)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: black olives, diced avocado, crumbled bacon

Instructions

  1. Cook the ground beef in a skillet over medium heat until no longer pink, about 6-8 minutes. Drain excess fat and return to pan.
  2. Add chopped onion and minced garlic to the beef. Cook for 3-4 minutes until onions soften. Season with salt, pepper, chili powder, and cumin. Stir to combine.
  3. Set slow cooker to low heat. Add softened cream cheese, cubed Velveeta, and shredded sharp cheddar cheese.
  4. Pour in diced tomatoes with green chilies and diced jalapeños.
  5. Add cooked beef and onion mixture to the slow cooker. Pour in milk to adjust consistency.
  6. Cover and cook on low for 1.5 to 2 hours, stirring every 30 minutes until cheese is melted and mixture is smooth.
  7. Taste and adjust seasoning. If too thick, add more milk; if too thin, cook uncovered for 15-20 minutes to thicken.
  8. Garnish with sliced green onions and chopped cilantro. Add optional toppings if desired. Serve warm.

Notes

Stir every 30 minutes to prevent cheese from sticking or burning. Soften cream cheese before adding to avoid lumps. Drain cooked ground beef well to prevent oily dip. Remove jalapeño seeds for milder heat. Use slow cooker warm setting to keep dip hot during serving. Can be reheated with a splash of milk to loosen consistency.
