Ultimate Loaded Buffalo Chicken Dip for Game Day

This creamy, spicy, and cheesy buffalo chicken dip is ready in under 30 minutes and perfect for game day, potlucks, or any gathering. Made with simple pantry ingredients, it’s always a hit and disappears fast.

  • 16 ounces cream cheese, softened to room temperature
  • 3 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 3/4 cup Frank’s RedHot Original hot sauce
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 2 cups sharp cheddar cheese, shredded and divided
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup blue cheese crumbles (optional)
  • 34 green onions, thinly sliced
  • 23 celery stalks, finely diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soften the cream cheese: if not at room temperature, microwave for 15-20 seconds until soft but not hot.
  3. Shred the chicken into bite-sized pieces (about 3 cups).
  4. In a large mixing bowl, combine softened cream cheese, shredded chicken, hot sauce, and dry ranch seasoning. Stir until evenly incorporated.
  5. Fold in 1½ cups of the shredded cheddar, all of the Monterey Jack, diced celery, and half of the green onions. Mix gently.
  6. Transfer the mixture to a 9×13-inch baking dish and spread evenly. Sprinkle the remaining ½ cup of cheddar on top. If using blue cheese crumbles, scatter them over now.
  7. Bake for 20-25 minutes, until hot and bubbly around the edges and the cheese is melted and lightly golden. For a deeper golden crust, broil for the last 2 minutes, watching carefully.
  8. Remove from the oven and let rest for 5 minutes. Sprinkle remaining green onions on top.
  9. Serve warm with tortilla chips, celery sticks, carrot sticks, crackers, or crusty bread.

Notes

For best results, use room temperature cream cheese and shred your own cheese from a block. The dip can be assembled a day ahead and refrigerated; add 5-10 minutes to baking time. To freeze, assemble without baking, cover tightly, and freeze for up to 3 months; thaw overnight in the refrigerator before baking. If the dip looks greasy after baking, stir once before serving.
