  • 1 tablespoon olive oil (for searing)
  • Salt and freshly ground black pepper (to taste)
  • 3 cups beef broth
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon soy sauce (optional)
  • 68 crusty sandwich rolls or French rolls
  • 8 slices provolone or Swiss cheese
  • Optional: thinly sliced roasted red peppers or caramelized onions

Instructions

  1. Pat the chuck roast dry with paper towels. Season generously with salt and pepper on all sides.
  2. Heat olive oil over medium-high heat in a large skillet. Sear the roast on each side for 3-4 minutes until browned. Transfer to slow cooker.
  3. In the same skillet, cook sliced onions over medium heat until golden brown, about 8-10 minutes. Add minced garlic and cook 1 more minute. Transfer to slow cooker.
  4. Add beef broth, Worcestershire sauce, soy sauce (if using), dried thyme, and bay leaf to slow cooker. Stir gently to combine.
  5. Cover and cook on low for 8-10 hours or on high for 4-5 hours until beef is fork-tender and easily shredded.
  6. Remove roast from slow cooker and shred with two forks. Return shredded beef to jus and remove bay leaf.
  7. Preheat oven broiler. Slice rolls in half, layer with shredded beef and cheese slices. Broil for 2-3 minutes until cheese melts.
  8. Serve sandwiches hot with warm au jus on the side for dipping.

Notes

Do not skip searing the beef to lock in flavor. Caramelize onions for natural sweetness. Serve au jus on the side to prevent soggy bread. Broil cheese quickly to avoid burning. Au jus can be made ahead and reheated gently. For gluten-free, use gluten-free rolls. For lower sodium, use low-sodium broth and reduce Worcestershire and soy sauce.
