A rich and comforting slow cooker pot roast sandwich with tangy pepperoncini au jus, perfect for an easy and satisfying dinner.

  • 3 to 4 pounds chuck roast, well-marbled
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 packet (about 1 oz or 28 g) ranch dressing mix
  • 1 packet (about 1 oz or 28 g) au jus gravy mix
  • 7 to 8 pepperoncini peppers
  • 1/4 cup (60 ml) pepperoncini juice
  • 3 large garlic cloves, minced
  • 6 large hoagie rolls or sandwich buns
  • Optional: handful fresh parsley, chopped
  • Optional: pickles or additional pepperoncini

Instructions

  1. Trim excess fat from the chuck roast and place it in the slow cooker. Sprinkle ranch dressing mix and au jus gravy mix evenly over the roast. Add minced garlic on top. (About 5 minutes)
  2. Place softened butter on top of the roast. Scatter pepperoncini peppers around and pour in pepperoncini juice to create the tangy au jus. (About 2 minutes)
  3. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours until the roast is tender and shreds easily with two forks. Avoid lifting the lid during cooking.
  4. Remove the roast and shred it inside the slow cooker using two forks. Mix shredded beef with the buttery au jus and pepperoncini. (About 5 minutes)
  5. Split hoagie rolls or buns and optionally toast them with a brush of melted butter. Pile on the shredded pot roast, spoon extra au jus over the top, garnish with parsley if desired, and serve immediately with extra au jus for dipping.

Notes

Do not lift the slow cooker lid during cooking to maintain moisture and temperature. Use a well-marbled chuck roast for best tenderness. Toast buns with butter to prevent sogginess. Pepperoncini juice is key for the signature tangy au jus flavor. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
