  • 3 pounds bone-in beef short ribs, well-marbled
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (or avocado oil)
  • 6 cloves garlic, minced
  • 1/4 cup honey (85 g)
  • 2 cups beef broth (475 ml), preferably low sodium
  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • For the mashed potatoes:
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream or whole milk (120 ml), or dairy-free alternative
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season short ribs generously with salt and pepper.
  3. Heat olive oil in a large heavy-bottomed Dutch oven over medium-high heat.
  4. Brown ribs in batches, about 3-4 minutes per side, until deep mahogany crust forms. Remove and set aside.
  5. Lower heat to medium and add minced garlic to the pot. Stir constantly for about 30 seconds until fragrant but not burnt.
  6. Add honey, beef broth, soy sauce, and apple cider vinegar to deglaze the pot, scraping up browned bits.
  7. Return ribs to the pot, nestle into the liquid, and add dried thyme and bay leaves.
  8. Cover with lid and transfer to oven. Braise for 2.5 to 3 hours until meat is fork-tender and falling off the bone.
  9. While ribs braise, prepare mashed potatoes: place peeled potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to boil.
  10. Reduce heat and simmer potatoes for 15-20 minutes until fork-tender. Drain well and return to pot.
  11. Add softened butter and warm cream or milk to potatoes. Mash until creamy but still fluffy. Season with salt and pepper to taste.
  12. Remove ribs from oven and transfer to serving platter. Tent with foil to keep warm.
  13. Place pot back on stove over medium heat and simmer braising liquid for 5-7 minutes until slightly thickened and glossy.
  14. Pour sauce over ribs and serve hot alongside creamy mashed potatoes.

Notes

Do not skip browning the ribs to lock in juices and flavor. Use fresh garlic for best aroma and taste. Warm cream or milk before adding to mashed potatoes to avoid gluey texture. Rest ribs under foil for 10 minutes after cooking to redistribute juices. If sauce is not thickening, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into simmering liquid.
