Instructions

  2. Cream Sugars and Butter: In a large bowl, combine the browned butter with 1 cup light brown sugar and ½ cup granulated sugar. Use a mixer or wooden spoon to cream together until smooth and slightly fluffy, about 2-3 minutes.
  3. Add Wet Ingredients: Beat in 1 large egg, then stir in 1 cup pumpkin puree and 1 teaspoon vanilla extract until fully incorporated and evenly mixed.
  4. Mix Dry Ingredients Separately: In another bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, and ½ teaspoon salt.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture in two batches, stirring gently but thoroughly after each addition until dough is soft but holds together. Add more flour by tablespoon if too wet.
  6. Fold in Chocolate Chips: Gently fold 1 ½ cups semisweet chocolate chips into the dough, ensuring even distribution without overmixing.
  7. Scoop and Prepare for Baking: Using a cookie scoop or tablespoon, drop dough balls onto parchment-lined baking sheets spaced about 2 inches apart. Press a few extra chocolate chips on top and sprinkle sea salt flakes lightly over each cookie.
