Instructions

  1. Finely shred 1 cup of zucchini using a microplane or fine grater. Wrap the shredded zucchini in a clean kitchen towel and press firmly to squeeze out excess moisture. Set aside.
  2. In a medium bowl, whisk together 1 cup all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  3. In a large bowl, use an electric mixer to beat 1/2 cup softened unsalted butter with 3/4 cup granulated sugar until pale and fluffy, about 3-4 minutes.
  4. Beat in 1 large room temperature egg, 1 teaspoon vanilla extract, 1 tablespoon fresh lemon zest, and 1 tablespoon fresh lemon juice until fully combined.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing gently on low speed or folding with a spatula just until combined. Avoid overmixing.
  6. Gently fold the prepared shredded zucchini into the batter, distributing it evenly without breaking the batter’s lightness.
  7. Using a tablespoon or cookie scoop, drop rounded mounds of dough about 2 inches apart onto parchment-lined baking sheets.
