Smash Burger Tacos Recipe Easy Homemade with Creamy Secret Sauce

A quick and easy recipe combining crispy smash burger patties with a creamy secret sauce, served in small tortillas for a fun and satisfying taco twist.

  • 1 pound (450g) ground beef (80/20 blend)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon vegetable oil or canola oil
  • ½ cup (120 ml) mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Hot sauce, a few dashes (optional)
  • 810 small flour or corn tortillas (6-inch/15 cm size)
  • 1 cup shredded lettuce or cabbage
  • ½ cup diced tomatoes or pico de gallo
  • Sliced pickles or jalapeños (optional)

Instructions

  1. Prepare the Secret Sauce: In a medium bowl, whisk together mayonnaise, Dijon mustard, ketchup, Worcestershire sauce, garlic powder, smoked paprika, and hot sauce if using. Taste and adjust seasoning. Cover and chill in the fridge while you cook the burgers.
  2. Form the Beef Balls: Divide the ground beef into 8 equal portions, about 2 ounces (56g) each. Gently roll them into loose balls — don’t pack them tightly or the patties will be tough.
  3. Heat the Skillet: Place your cast iron skillet or heavy pan on medium-high heat. Add 1 tablespoon of vegetable oil and let it get very hot but not smoking — you want a good sizzle when the meat hits the pan.
  4. Smash the Patties: Working in batches (don’t crowd the pan), place a beef ball on the skillet. Immediately press down firmly with your spatula to flatten it into a thin patty, about ¼ inch (6 mm) thick. Hold the spatula for 10-15 seconds to set the crust.
  5. Season and Cook: Sprinkle salt and pepper over each patty. Cook without moving for about 2 minutes until the edges are dark brown and crispy.
  6. Flip and Finish: Carefully flip the patties and cook for another 1 to 1.5 minutes for medium rare to medium doneness. If you want cheese, add a slice immediately after flipping and cover the pan briefly to melt.
  7. Warm the Tortillas: While finishing the patties, warm tortillas in another dry skillet or directly over a gas flame for a few seconds each side until soft and pliable.
  8. Assemble the Tacos: Place a patty on each tortilla, drizzle generously with the creamy secret sauce, then top with shredded lettuce, diced tomatoes or pico de gallo, and pickles or jalapeños if you like.
  9. Serve Immediately: These tacos are best enjoyed hot off the griddle for the perfect contrast of textures and flavors.

Notes

Use 80/20 ground beef for juicy patties with a crispy crust. Keep beef cold until cooking. Press patties firmly but not too hard. If patties stick to the pan, wait a few more seconds before flipping. Warm tortillas just before serving to keep them soft. The secret sauce can be made up to 3 days ahead and stored in the fridge.
