  • 1 can black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups chicken broth (preferably low sodium)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 12 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon oregano (preferably Mexican oregano)
  • Juice of 2 fresh limes
  • 1 large avocado, diced
  • About 1 cup tortilla strips (homemade or store-bought)
  • Salt and pepper to taste
  • A handful fresh cilantro, chopped (optional)

Instructions

  1. Dice the onion and mince the garlic cloves. Pat chicken thighs dry with paper towels.
  2. Add diced onions, minced garlic, black beans, fire-roasted tomatoes with juices, and chicken broth to the slow cooker. Nestle chicken thighs on top.
  3. Sprinkle cumin, chili powder, oregano, salt, and pepper evenly over ingredients. Add minced chipotle peppers according to desired spice level. Stir gently once to distribute spices.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is tender and easily shredded.
  5. Remove chicken thighs and shred with two forks. Return shredded chicken to the slow cooker and stir to combine. Taste and adjust seasoning if needed.
  6. Optionally, blend about one-third of the soup with an immersion blender for a creamier texture, then stir back into the pot.
  7. Squeeze juice from two fresh limes into the soup and stir to brighten flavors.
  8. Dice avocado just before serving to avoid browning. Chop fresh cilantro and slice extra limes for garnish.
  9. Ladle soup into bowls and top with diced avocado, crispy tortilla strips, and fresh cilantro. Serve with lime wedges on the side.

Notes

Pat chicken dry before adding to slow cooker to help brown if searing first. Adjust chipotle peppers to control spice level. Blend part of the soup for creaminess without dairy. Prepare avocado and toppings just before serving to keep fresh. If soup is too thick after cooking, stir in extra broth or water. Leftovers keep well refrigerated for 3-4 days; store toppings separately. Freeze soup without avocado and tortilla strips.
