A quick and easy garlic butter Tuscan chicken recipe featuring tender chicken breasts in a creamy sauce with sun-dried tomatoes and fresh spinach, ready in under 30 minutes.

  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 3 cups fresh baby spinach, loosely packed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Small handful fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking, about 2 minutes.
  3. Add chicken breasts and cook for 5-6 minutes on one side without moving until golden crust forms. Flip and cook another 5-6 minutes until internal temperature reaches 165°F (74°C). Remove chicken and set aside, tented with foil.
  4. Reduce heat to medium and add unsalted butter to the skillet. Once melted, stir in minced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Add chopped sun-dried tomatoes and fresh spinach. Cook until spinach wilts, about 2-3 minutes.
  6. Pour in heavy cream, stirring constantly. Let simmer gently for 3-4 minutes to thicken slightly.
  7. Stir in grated Parmesan cheese and dried Italian herbs until sauce is creamy and smooth.
  8. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the chicken and heat together for 2 minutes to meld flavors.
  9. Garnish with chopped fresh parsley and serve hot.

Notes

If sauce is too thick, add a splash of chicken broth or water to loosen. Avoid burning garlic by cooking over medium heat and stirring constantly. For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with vegan alternatives. Chicken thighs can be used but require longer cooking time. Leftovers keep well refrigerated for up to 3 days; reheat gently with added liquid to loosen sauce.
