A creamy, mildly spicy buffalo chicken dip made in a crockpot, perfect for parties and served with refreshing crispy celery scoops for a healthy crunch.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 1/2 cup mild buffalo wing sauce
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup ranch dressing (optional)
  • 2 tablespoons finely chopped green onions
  • 45 celery stalks, sliced into scoopable pieces
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Black pepper to taste

Instructions

  1. If not already cooked, poach or roast 2 cups of chicken breasts or thighs, then shred using two forks or a mixer (about 15-20 minutes).
  2. In a mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, shredded cheddar cheese, ranch dressing (if using), chopped green onions, garlic powder, onion powder, and black pepper. Stir until evenly mixed and creamy (about 5 minutes).
  3. Pour the mixture into the crockpot and spread evenly. Set crockpot on low heat.
  4. Cook for 2 to 3 hours on low, stirring once or twice to prevent sticking. If too thick, stir in 1-2 tablespoons of milk or extra ranch dressing.
  5. While the dip cooks, wash and slice celery stalks into sturdy scoop-sized pieces and arrange on a serving plate.
  6. Once the dip is ready, stir well, then top with extra shredded cheddar and green onions for garnish. Serve warm with celery scoops.

Notes

[‘Use room temperature cream cheese for a smooth, creamy base.’, ‘Shred chicken finely for even flavor distribution and easier scooping.’, ‘Cook on low and stir occasionally to prevent burning and drying out.’, ‘Adjust heat by swapping mild buffalo sauce for hot or adding cayenne pepper.’, ‘Celery scoops add a fresh, crunchy contrast; alternatives include baked pita chips, cucumber slices, or crispy baked wonton wrappers.’, ‘For a cheesier top, switch crockpot to high for the last 15 minutes.’, ‘Leftovers can be refrigerated up to 3 days or frozen up to 2 months.’]
