A quick and easy grilled flatbread pizza topped with tangy BBQ chicken, melty cheese, and fresh cilantro, perfect for a flavorful outdoor dinner.

  • 2 large store-bought flatbreads (810 inches each), whole wheat or plain
  • 2 cups cooked chicken breast, shredded or chopped
  • 1/2 cup barbecue sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup smoked gouda or cheddar cheese
  • 1/4 cup thinly sliced red onion
  • A handful of fresh cilantro leaves, roughly chopped
  • 1 tablespoon olive oil
  • Optional: sliced jalapeños
  • Optional: pineapple chunks

Instructions

  1. In a bowl, toss the shredded cooked chicken with 1/2 cup BBQ sauce until evenly coated. Set aside for 5 minutes.
  2. Preheat the grill to medium-high heat (about 400°F). If using charcoal, wait until coals are covered with white ash.
  3. Brush each flatbread lightly with olive oil on one side; this side will go down on the grill first.
  4. Place the flatbreads oil-side down on the grill. Close the lid and grill for 2-3 minutes until grill marks appear and the bread is crisp but not burnt.
  5. Flip the flatbreads carefully using tongs. Quickly spread the BBQ chicken evenly over the flatbread, then sprinkle shredded mozzarella and smoked gouda or cheddar on top. Scatter sliced red onions and jalapeños if using.
  6. Close the grill lid and cook for another 3-4 minutes, or until the cheese melts and bubbles and the edges of the flatbread are nicely charred.
  7. Transfer the flatbreads to a serving board. Sprinkle fresh cilantro over the top.
  8. Slice into wedges and serve immediately while the cheese is gooey.

Notes

If cheese isn’t melting fast enough, close the grill lid or move flatbread to a hotter spot briefly. Lower heat if flatbread browns too quickly. Use pre-cooked chicken for faster prep. Avoid overloading toppings to prevent soggy crust. Leftovers keep well for 2 days; reheat in skillet or broiler for best texture.
