Savory BBQ Bacon Cheddar Stuffed Burgers

Juicy beef patties stuffed with sharp cheddar cheese, smoky bacon, and tangy BBQ sauce, grilled to perfection for a flavorful and satisfying burger experience.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 4 oz (115 g) sharp cheddar cheese, shredded
  • 4 slices bacon, cooked and chopped
  • 2 tbsp BBQ sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 4 burger buns (brioche or potato rolls recommended)
  • Optional toppings: lettuce, tomato, pickles, extra BBQ sauce

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crisp, about 8-10 minutes. Drain on paper towels and chop into small pieces.
  2. In a large mixing bowl, combine ground beef, salt, black pepper, garlic powder, onion powder, and BBQ sauce. Mix gently by hand until just combined.
  3. Divide the beef mixture into 8 equal portions (about 2 oz each). Flatten 4 portions into thin patties about ¼ inch thick.
  4. Sprinkle 1 oz shredded cheddar and 1 tbsp chopped bacon evenly over each flattened patty, leaving edges clear.
  5. Place one of the remaining 4 beef portions over each filled patty and pinch edges to seal, forming thick patties about ¾ inch thick.
  6. Preheat grill or cast-iron skillet to medium-high heat (about 375°F).
  7. Cook stuffed patties for 5-6 minutes on the first side without moving, then flip and cook another 5-6 minutes until internal temperature reaches 160°F.
  8. Toast burger buns lightly on the grill or in a toaster.
  9. Assemble burgers by placing patties on buns and adding optional toppings and extra BBQ sauce. Serve immediately.

Notes

Do not overmix the beef to keep patties tender. Wet fingers with water to help seal edges tightly. Use a meat thermometer to ensure burgers reach 160°F for safety. If cheese leaks, reduce heat or make thicker patties. Rest burgers for a couple of minutes after cooking for juiciness.
