  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cups peeled and diced fresh apples (Granny Smith or Honeycrisp)
  • ½ cup salted caramel sauce
  • ¾ cup (about 120 g) toffee bits (Heath or Skor recommended)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk melted butter with granulated sugar and brown sugar until smooth. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  4. Gradually fold dry ingredients into wet ingredients until just combined; avoid overmixing.
  5. Gently fold in diced apples and toffee bits, distributing evenly.
  6. Pour half the batter into the prepared pan and spread evenly. Drizzle half the salted caramel sauce over the batter.
  7. Dollop remaining batter on top and spread gently. Drizzle remaining caramel sauce over the top in a loose pattern.
  8. Bake for 30-35 minutes, checking at 30 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  9. Remove from oven and cool completely on a wire rack.
  10. Slice into 12 squares and serve warm or at room temperature.

Notes

Use tart, firm apples like Granny Smith for best texture. Avoid overmixing batter to keep blondies tender. Warm caramel sauce slightly if too thick to drizzle. Line pan with parchment paper for easy removal and cleanup. Toffee bits should be folded in gently to maintain crunch.
