These roasted delicata squash rings are caramelized, tender, and drizzled with a creamy maple tahini sauce. A simple, no-peel fall side dish that comes together in 30 minutes and converts even squash skeptics.

  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons tahini (well-stirred)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons water (to thin)
  • Optional garnishes: toasted sesame seeds, fresh parsley or cilantro, flaky sea salt, red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash delicata squash thoroughly, pat dry, and trim off the ends. Slice crosswise into ½-inch thick rings.
  3. Using a small spoon or fingers, remove seeds and stringy pulp from the center of each ring. Place rings in a single layer on the prepared baking sheet.
  4. Drizzle olive oil over the rings and use hands or a brush to coat evenly on both sides. Sprinkle with salt and pepper, flip, and season the other side.
  5. Roast for 12 minutes, then flip each ring. Roast for another 10-12 minutes until edges are golden brown and caramelized, and rings are tender when pierced with a fork.
  6. While squash roasts, make the drizzle: In a small bowl, whisk together tahini, maple syrup, and lemon juice until smooth. Add water 1 tablespoon at a time, whisking continuously, until pourable. Adjust sweetness or tang to taste.
  7. Transfer roasted rings to a serving platter. Drizzle with maple tahini sauce. Garnish with sesame seeds, fresh herbs, and flaky sea salt if desired. Serve immediately.

Notes

Slice rings evenly (½-inch thick) for consistent cooking. Don’t overcrowd the baking sheet to avoid steaming. Watch the last few minutes closely to prevent burning. Make the drizzle while squash roasts to save time. Use room temperature tahini for easier whisking. Store leftovers separately from drizzle for best texture.
