Refreshing Watermelon Popsicles Recipe with Lime and Tajín Perfect for Summer

These watermelon popsicles combine sweet, tart, and spicy flavors with fresh watermelon, lime juice, and Tajín seasoning for a refreshing summer treat that’s quick and easy to make.

  • 4 cups seedless watermelon chunks (about 600 grams or 21 ounces)
  • 3 tablespoons fresh lime juice (about 45 ml or 1.5 fl oz)
  • 2 tablespoons honey or agave syrup (30 ml or 1 fl oz)
  • 1 to 2 teaspoons Tajín seasoning (5 to 10 grams)
  • 1/4 cup water (60 ml or 2 fl oz)
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups (600 grams or 21 ounces) of seedless watermelon into chunks, removing any seeds if needed.
  2. Add the watermelon chunks and 1/4 cup (60 ml or 2 fl oz) of water to a blender and blend until smooth, about 1 minute.
  3. In a small bowl, combine 3 tablespoons (45 ml or 1.5 fl oz) fresh lime juice, 2 tablespoons (30 ml or 1 fl oz) honey, and 1 to 2 teaspoons (5 to 10 grams) Tajín. Stir until the honey dissolves. Taste and adjust sweetness or Tajín as desired.
  4. Pour the lime and Tajín mixture into the blender with the watermelon puree. Add a pinch of sea salt if using. Blend again briefly (about 20 seconds) to mix evenly.
  5. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks.
  6. Freeze for at least 6 hours or overnight until completely solid.
  7. To unmold, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out. Serve immediately.

Notes

Use ripe watermelon for best sweetness. Adjust Tajín seasoning gradually to control spice level. Fresh lime juice is essential for bright flavor. If popsicles are too icy, blend with a bit more water or coconut water next time. Freeze overnight for best texture. To unmold easily, run warm water over molds briefly.
