A quick and easy watermelon mojito blending fresh watermelon, mint, lime, sugar, rum, and sparkling water for a refreshing summer cocktail with a playful twist.

  • 2 cups seedless watermelon, cubed
  • 1012 fresh mint leaves, plus extra for garnish
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1/2 cup (120 ml) white rum
  • 1 cup (240 ml) sparkling water or club soda, chilled
  • Ice cubes as needed
  • Lime wedges for garnish (optional)
  • Mint sprigs for garnish (optional)

Instructions

  1. Chop 2 cups of seedless watermelon into chunks and rinse 10-12 fresh mint leaves.
  2. Place watermelon chunks, mint leaves, 2 tablespoons sugar, and fresh lime juice into a blender. Blend until smooth, about 1 minute.
  3. Optional: Strain the blended mixture through a fine mesh strainer into a pitcher or large glass for a pulp-free drink.
  4. Stir in 1/2 cup white rum to the watermelon-mint base.
  5. Fill serving glass or pitcher with ice cubes and stir gently to mix.
  6. Pour 1 cup chilled sparkling water over the mixture and stir lightly to combine without losing fizz.
  7. Garnish with a sprig of fresh mint and a lime wedge. Optionally add small watermelon cubes or crushed ice.
  8. Serve immediately.

Notes

Use ripe watermelon for maximum sweetness to reduce added sugar. Straining is optional but recommended for a smoother drink. Serve immediately to preserve fizz and freshness. For a non-alcoholic version, omit rum and add extra sparkling water or coconut water.
