  • 2 cups (480 ml) sparkling water or club soda
  • Ice cubes as needed

Instructions

  1. Cut about 6 cups of seedless watermelon into chunks, removing rind and seeds. Blend until smooth (about 30 seconds) to yield roughly 2 cups (480 ml) of watermelon juice. Strain if less pulp is desired.
  2. In a large pitcher, add 1 cup loosely packed fresh mint leaves and juice of 3-4 limes (about 1/4 cup or 60 ml). Gently muddle with a muddler or wooden spoon to release oils and juice without pulverizing the mint.
  3. Add 1/2 cup (120 ml) simple syrup and 1 cup (240 ml) white rum to the pitcher. Stir gently to combine.
  4. Pour in the freshly pureed watermelon juice and stir gently to mix all flavors evenly.
  5. Refrigerate the mixture for at least 30 minutes to let flavors marry.
  6. Just before serving, add 2 cups (480 ml) sparkling water or club soda. Stir lightly to combine without losing fizz.
  7. Serve over ice cubes in tall glasses and garnish with lime slices, mint sprigs, or watermelon wedges.
