A bright, bubbly, and alcohol-free peach bellini mocktail perfect for brunch or any occasion, made with fresh peach puree, sparkling water, and a splash of lemon juice.

Ingredients

  • 2 medium ripe peaches, peeled and sliced
  • 12 fl oz (355 ml) chilled sparkling water
  • 1 tablespoon fresh lemon juice
  • 12 teaspoons honey or agave syrup (optional)
  • Ice cubes
  • Mint leaves for garnish (optional)

Instructions

  1. Peel the peaches (optional) and slice into chunks, removing pits.
  2. Place peach chunks in a blender or food processor. Add lemon juice and honey or agave syrup if using. Blend until smooth and silky, about 30-45 seconds.
  3. Pour the peach puree into a bowl or pitcher and refrigerate for at least 10 minutes if desired.
  4. Fill serving glasses halfway with ice cubes (optional). Spoon 2-3 tablespoons (30-45 ml) of peach puree into each glass.
  5. Slowly pour chilled sparkling water over the puree, filling the glass. Stir gently to combine without losing bubbles.
  6. Garnish with a fresh mint sprig or thin peach slice and serve immediately.

Notes

Use ripe peaches for best flavor and smooth texture. Frozen peaches can be used if thawed first. Chill ingredients for best fizz. Stir gently to preserve carbonation. Adjust sweetness to taste. Leftover peach puree can be refrigerated up to 2 days; add sparkling water fresh before serving.
