A light, bubbly, and sweet sparkling peach bellini mocktail made with fresh peaches, sparkling water, and a hint of citrus. Perfect for any occasion and ready in under 10 minutes.

Ingredients

  • 2 medium fresh ripe peaches, peeled and sliced (about 300 grams)
  • 1 cup (240 ml) sparkling water, chilled
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 ml) honey or agave syrup (optional)
  • A drop of vanilla extract (optional)
  • Ice cubes
  • Fresh mint leaves for garnish

Instructions

  1. Peel and slice about 2 medium ripe peaches (approximately 300 grams). If using frozen peaches, thaw completely and drain excess liquid.
  2. Place peach slices in a blender or food processor. Add lemon juice and honey or agave syrup if peaches aren’t very sweet. Blend until smooth, about 30 seconds. Optionally strain through a fine mesh to remove pulp.
  3. Transfer peach puree to a mixing glass or pitcher and chill for 5–10 minutes in the fridge if time allows.
  4. Pour 1 cup (240 ml) of chilled sparkling water into the peach puree. Stir gently with a bar spoon to combine without losing fizz.
  5. Fill a chilled glass halfway with ice cubes, then pour the sparkling peach mixture over.
  6. Garnish with fresh mint leaves and optionally a thin peach slice on the rim.
  7. Serve immediately and enjoy.

Notes

Use ripe peaches for best flavor. Chill sparkling water and peach puree before mixing to keep bubbles lively. Stir gently to preserve carbonation. Adjust sweetness with honey or syrup as needed. Frozen peaches can be used if thawed. Vanilla extract is optional and should be used sparingly.
