Refreshing Frozen Cherry Limeade Popsicles

A simple and refreshing frozen treat combining the tartness of limeade and fresh lime juice with the sweetness of cherries, perfect for summer.

Ingredients

  • 2 cups (about 300g) frozen cherries
  • 1 cup (240ml) limeade concentrate, thawed
  • Juice of 1 large lime
  • 2 tablespoons honey or agave syrup (optional)
  • 1 cup (240ml) water
  • A handful of fresh mint leaves (optional)

Instructions

  1. Measure out 2 cups (about 300g) of frozen cherries and place them in a blender or food processor.
  2. Add 1 cup (240ml) of limeade concentrate, juice from one large lime, and 1 cup (240ml) of water.
  3. Add 2 tablespoons of honey or agave syrup if desired for sweetness.
  4. Add a handful of fresh mint leaves if using, pulse a couple times to combine without pureeing.
  5. Blend on high for 30 to 45 seconds until smooth but slightly textured.
  6. Pour mixture evenly into popsicle molds, leaving space at the top for expansion.
  7. Insert sticks, cover, and freeze for at least 6 hours or overnight.
  8. Let popsicles sit at room temperature for 5 minutes before unmolding.

Notes

Use frozen cherries straight from the freezer for best texture. Adjust sweetness to taste before freezing. Let popsicles freeze fully overnight for best texture. If popsicles stick, dip molds briefly in warm water to loosen. Fresh lime juice brightens flavor more than bottled. For vegan version, substitute honey with agave or maple syrup.
