A light, crisp, and refreshing non-alcoholic mojito featuring fresh cucumber, mint, lime, and sparkling water—perfect for hot summer days.

Ingredients

  • About half a medium fresh cucumber, sliced thinly
  • 1012 fresh mint leaves, washed gently
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 to 2 teaspoons agave syrup or honey (adjust to taste)
  • 1 cup (8 fl oz / 240 ml) chilled sparkling water
  • Plenty of ice cubes
  • Optional: splash of fresh ginger juice or a few slices of jalapeño for a subtle spicy twist

Instructions

  1. Wash the mint leaves gently to avoid bruising. Slice about half a medium cucumber into thin rounds. Juice one large lime to get roughly 2 tablespoons of fresh juice. Have your sweetener and sparkling water ready.
  2. In your glass, add the mint leaves and cucumber slices. Using a muddler or wooden spoon, press gently about 8-10 times to release the fresh cucumber juice and mint oils without tearing the leaves apart.
  3. Pour in the fresh lime juice and add 1 to 2 teaspoons of agave syrup or honey. Stir gently to combine and adjust sweetness if needed.
  4. Fill the glass about two-thirds full with ice cubes.
  5. Pour 1 cup (240 ml) of chilled sparkling water over the ice.
  6. Use a long spoon or stirrer to mix the drink lightly, avoiding aggressive stirring to keep the bubbles.
  7. Garnish with a sprig of fresh mint and a cucumber slice on the rim of the glass. Optionally add a thin lime wheel or a twist of lime zest.

Notes

Be gentle when muddling mint to avoid bitterness. Use fresh lime juice for best flavor. Chill your glass beforehand for extra coolness. Adjust sweetness to taste. Use quality sparkling water for best fizz. Prepare cucumber-mint mixture ahead and add sparkling water and ice just before serving for freshness.
