  • 1 medium bell pepper, diced

  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or crushed red pepper flakes
  • Optional: fresh parsley or green onions, chopped for garnish

Instructions

  1. Slice the smoked sausage into ½-inch thick rounds and set aside.
  2. Dice the bell pepper and finely chop the onion. Mince the garlic cloves. This prep should take about 5 minutes.
  3. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Let it warm for about 30 seconds until shimmering.
  4. Add the sliced sausage to the skillet and cook for 3 to 4 minutes, stirring occasionally, until edges are slightly browned and the sausage releases its smoky aroma.
  5. Add the diced bell pepper, chopped onion, and minced garlic to the skillet. Cook for another 3 to 4 minutes until the veggies soften and the onion turns translucent, stirring frequently to avoid burning.
  6. Stir in 1 cup of long-grain white rice, coating it in the sausage fat and veggies. Toast the rice lightly for 1 to 2 minutes until nutty scented.
  7. Pour in 2 cups of chicken broth and stir to combine. Bring to a gentle boil.
  8. Reduce heat to low, cover the skillet with a tight-fitting lid, and let the rice cook undisturbed for 15 minutes.
  9. Remove from heat and let sit covered for 5 minutes. Then remove the lid and fluff the rice with a fork, mixing the sausage and veggies evenly.
