  • 45 sprigs fresh dill (or 2 teaspoons dried dill)
  • 34 garlic cloves, peeled and smashed
  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • 1 tablespoon pickling salt or kosher salt
  • 1 teaspoon sugar (optional)
  • 1 teaspoon whole black peppercorns
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and slice the cucumbers into 1/4-inch (about 6 mm) thick rounds or spears.
  2. In a mixing bowl, combine 1 cup white vinegar, 1 cup water, 1 tablespoon pickling salt, and 1 teaspoon sugar (if using). Stir until salt and sugar dissolve.
  3. Place 4-5 sprigs fresh dill, 3-4 smashed garlic cloves, 1 teaspoon black peppercorns, and optional 1/4 teaspoon red pepper flakes into the bottom of a clean quart-size glass jar.
  4. Tightly pack the cucumber slices or spears into the jar, leaving about 1/2 inch of headspace at the top.
  5. Pour the brine over the cucumbers, ensuring they are fully submerged. Use a clean utensil to press them down if needed.
  6. Seal the jar tightly with the lid and refrigerate for at least 24 hours (up to 3 days for stronger flavor).
  7. After 24 hours, enjoy your quick refrigerator dill pickles. Keep refrigerated and consume within 2 weeks.

Use fresh, firm cucumbers for best crunch. Soak cucumbers in ice water for 30 minutes before slicing for extra crispness. Keep cucumbers fully submerged in brine to avoid softening.
