Quick Garlic Butter Steak Bites with Green Beans

  • 1 pound sirloin steak, trimmed and cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (for searing)
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 12 ounces fresh green beans, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Pat the sirloin steak dry with paper towels to remove excess moisture. Cut into 1-inch cubes, aiming for uniform size. Season generously with salt and pepper in a mixing bowl and toss to coat. Set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add trimmed green beans, season with salt and pepper, and sauté until bright green and just tender but still crisp, about 5-7 minutes. Add lemon zest if using, toss briefly, then transfer to a plate and cover loosely with foil to keep warm.
  3. Reduce heat to medium and add 2 tablespoons butter to the same skillet. Once melted, add minced garlic and thyme. Cook gently, stirring constantly, until fragrant and just starting to turn golden, about 1-2 minutes. Be careful not to burn the garlic.
  4. Push the garlic butter to the side of the pan and add olive oil. Increase heat to medium-high. Add steak cubes in a single layer without overcrowding. Let sear without moving for about 2 minutes, then turn to brown all sides evenly, about 2-3 minutes more.
  5. Return garlic butter mixture to the center, add remaining 2 tablespoons butter, and toss steak bites in the sauce to coat thoroughly. Cook for an additional minute to marry the flavors.
  6. Add green beans back to the pan, toss gently to combine and warm through. Sprinkle chopped parsley on top and serve immediately.

Notes

Dry steak pieces thoroughly before seasoning to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Cook garlic gently to avoid burning. Rest steak bites briefly off heat to keep them juicy. Frozen green beans can be used if thawed and dried well. For dairy-free, substitute butter with plant-based butter or olive oil.
