  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ½ cup (120g) pumpkin puree
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in pumpkin puree, egg, and vanilla extract on low speed until just combined.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed just until no streaks of flour remain.
  6. In a small bowl, stir together ¼ cup sugar and 1 tablespoon cinnamon for coating.
  7. Using a cookie scoop or spoons, portion out rounded tablespoons of dough. Roll into balls, then coat in cinnamon-sugar mixture. Place on prepared baking sheets about 2 inches apart.
  8. Bake one sheet at a time for 10-12 minutes, until puffed and slightly cracked on top with edges just set.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Don’t skip the cream of tartar; it’s essential for chewy texture. Drain homemade pumpkin puree to avoid excess moisture. Use room temperature ingredients for best results. Bake one sheet at a time for even baking. Cookies taste even better the next day.
