These Quick Garlic Butter Pork Chops are the result of a parking lot conversation and a determination to never serve a dry pork chop again. They’re fast, affordable, and absolutely delicious—perfect for busy weeknights.

  • 4 boneless pork chops, about 1 inch thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth (low-sodium preferred)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Prep the pork chops: Pat them dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and paprika. Let them sit at room temperature for about 5 minutes.
  2. Heat the pan: Place a large skillet over medium-high heat and add the olive oil. Let it get hot until shimmering but not smoking.
  3. Sear the pork chops: Carefully place the pork chops in the hot pan. Do not crowd them. Sear undisturbed for 3-4 minutes until they release easily from the pan. Flip and cook for another 2-3 minutes on the other side. Internal temperature should be around 135°F (57°C).
  4. Make the garlic butter: Reduce heat to medium-low. Push pork chops to one side, add butter. Once melted, add minced garlic and stir for about 30 seconds until fragrant.
  5. Baste the pork chops: Add chicken broth to the pan. Use a spoon to baste the pork chops with the garlic butter sauce for 1-2 minutes.
  6. Check the temperature: Insert a meat thermometer into the thickest part of a pork chop. Target temperature is 145°F (63°C).
  7. Rest and serve: Transfer pork chops to a plate and let rest for 3 minutes. Pour remaining garlic butter sauce over the top. Sprinkle with fresh parsley and a squeeze of lemon juice if using.

Notes

Pat pork chops dry for a good sear. Don’t overcrowd the pan. Let meat rest before cutting. Fresh garlic is non-negotiable. Use a meat thermometer for perfect doneness.
