A quick and easy cookie recipe perfect for creating a thoughtful thank you gift box arrangement for any occasion, featuring tender, chewy cookies with classic flavors.

Ingredients

Scale
  • 2 ½ cups (300g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup packed (165g) brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (270g) chocolate chips or chunks (semi-sweet or mix with bittersweet)
  • Optional: ½ cup (60g) chopped nuts (pecans or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and glossy.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding by hand until just combined. Avoid overmixing.
  6. Gently fold in the chocolate chips and optional chopped nuts.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes until edges are golden and centers remain soft. Rotate baking sheets halfway through baking for even browning.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack.
  10. Line the gift box with wax or parchment paper. Arrange cookies in single layers separated by additional paper to avoid sticking.
  11. Add a handwritten thank you note, tie the box with ribbon or twine, and add any decorative accents like dried flowers or stickers.

Notes

If dough feels too soft, chill for 15-20 minutes before scooping. Rotate baking sheets halfway through baking for even browning. Use wax or parchment paper between cookie layers in the box to prevent sticking. Butter should be softened but not melted for best texture. Dough can be refrigerated up to 3 days before baking. Cookies keep well in an airtight container for 5 days or can be frozen for up to 3 months.
