  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • About 12 oz (340g) white fondant (Wilton brand recommended)
  • Gel food coloring: orange, green, yellow, brown
  • Fondant rolling pin or small regular rolling pin
  • Leaf-shaped cutters or sharp knife
  • Veining tool or small knife for texture
  • Edible glue or water to attach leaves

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper. (5 minutes)
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. (5 minutes)
  3. In another bowl, beat vegetable oil with eggs, pumpkin puree, vanilla extract, and buttermilk until smooth but thick. (5 minutes)
