  • 1/4 teaspoon instant yeast
  • 1 1/4 teaspoons salt
  • 1 1/2 cups (360 ml) warm water (around 75°F / 24°C)
  • 2 tablespoons fresh rosemary, chopped
  • 1 whole head of garlic (for roasting)
  • 1 tablespoon olive oil (to drizzle before baking)
  • Coarse sea salt (for sprinkling on top)

Instructions

  1. Preheat oven to 400°F (205°C). Slice off the top of the garlic head to expose cloves, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Let cool.
  2. In a large bowl, combine flour, yeast, and salt. Pour in warm water and stir until a shaggy, sticky dough forms. Mix in chopped rosemary and softened roasted garlic (squeeze out and mash cloves).
  3. Cover bowl with kitchen towel or plastic wrap and let dough rise at room temperature for 12 to 18 hours until doubled and bubbly.
  4. Dust work surface lightly with flour. Scrape dough onto surface and fold over itself a couple of times to shape into a round ball. Let rest for 30 minutes, covered.
  5. Place Dutch oven with lid inside oven and preheat to 450°F (230°C) for at least 30 minutes.
  6. Carefully remove hot Dutch oven. Place dough inside, drizzle with olive oil, sprinkle coarse sea salt on top, and score surface with a sharp knife.
  7. Cover and bake for 30 minutes.
  8. Remove lid and bake uncovered for 10-15 minutes until crust is deep golden and crackling.
  9. Cool bread on a wire rack for at least one hour before slicing.

Preheating the Dutch oven is essential for a crispy crust. Keep the dough covered during the long rise to retain moisture. Let bread cool completely before slicing to avoid gummy texture. Roasting garlic mellows its sharpness and adds sweetness. If dough is sticky during shaping, lightly flour hands but avoid excess flour to keep crumb tender.
