Ingredients

Scale
  • 8 oz wheel Brie or Camembert
  • 4 oz Aged Gouda
  • 4 oz Blue Cheese (gorgonzola or roquefort)
  • 4 oz Sharp White Cheddar
  • 46 oz Prosciutto, thinly sliced
  • 4 oz Sopressata
  • 3 oz Speck (optional)
  • 810 fresh Black Mission figs
  • 45 dried Mission figs
  • 1 cup green grapes
  • ½ cup fresh pomegranate seeds (optional)
  • ½ cup candied pecans
  • ½ cup Marcona almonds
  • ½ cup walnut halves, toasted
  • ⅓ cup local honey
  • ¼ cup fig jam or preserve
  • 2 tbsp Dijon mustard (optional)
  • 1 crusty baguette, sliced into ½-inch rounds and toasted
  • 810 assorted crackers (water crackers, rosemary crackers, seeded flatbreads)
  • Fresh rosemary sprigs for garnish
  • ¼ cup dried cranberries

Instructions

  1. Prepare your board: Start with a clean, dry board. Place small bowls at the edges or corners for honey, fig jam, mustard, and pomegranate seeds.
  2. Fill the small bowls: Pour honey into one bowl, fig jam into another, Dijon mustard into a third, and pomegranate seeds into a fourth (if using). Set aside.
  3. Place the cheeses: Position cheeses evenly around the board. Leave brie whole. Slice aged gouda into thin wedges and fan them out. Cut cheddar into small cubes or thin slices. Crumble blue cheese into a small pile. Keep at least 2 inches between soft and hard cheeses.
  4. Add the meats: Fold prosciutto slices into loose ribbons or rosettes. Place near brie. Slice sopressata into thin rounds and overlap in a line. Fold speck similarly to prosciutto if using.
  5. Arrange the fruits: Wash and dry figs gently. Cut fresh figs in half lengthwise and arrange cut-side up in small clusters. Place dried figs whole or halved near aged gouda. Scatter green grapes in small bunches. Sprinkle pomegranate seeds over the board.
  6. Add the crunch: Scatter candied pecans, Marcona almonds, and toasted walnut halves in small piles around the board. Cluster them for visual interest.
  7. Position the accompaniments: Place sliced baguette rounds and crackers around the edges of the board. Fan baguette slices in a curved line. Tuck dried cranberries into empty spaces.
  8. Drizzle and garnish: Drizzle a small amount of honey directly over the figs and brie. Sprinkle fresh rosemary sprigs around the board. Add a few whole figs for height.
  9. Final adjustments: Step back and look at your board. Fill any gaps with extra crackers or nuts. Add cheese knives and small spoons.

Notes

Take cheeses out of fridge 30-45 minutes before serving for best flavor. Cut figs right before serving to prevent browning. Don’t overcrowd the board; leave negative space. Drizzle honey only over figs and brie, not the entire board. Assemble within 30 minutes of serving for best freshness.
