  • 2 large eggs, room temperature
  • ¼ cup (30 g) all-purpose flour
  • ¼ tsp espresso powder (optional)
  • ½ tsp vanilla extract
  • Pinch of salt
  • Cocoa powder for dusting ramekins

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Butter and dust the ramekins lightly with cocoa powder.
  3. Melt the chocolate and butter together in a double boiler or microwave-safe bowl, stirring every 20 seconds until smooth. Let cool slightly.
  4. Whisk eggs and sugar vigorously until thick and pale, about 2-3 minutes by hand or 1-2 minutes with a mixer.
  5. Slowly pour the melted chocolate-butter mixture into the egg mixture while whisking continuously.
  6. Stir in vanilla extract, espresso powder (if using), and salt.
  7. Sift flour over the batter and fold gently with a spatula until just combined.
  8. Divide the batter evenly into the prepared ramekins, filling about ¾ full.
  9. Bake for 12-14 minutes until edges are set but the center is still slightly jiggly.
  10. Let cakes cool for 1 minute, then run a knife around edges and invert onto serving plates.
