  • 2 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) buttermilk, room temperature
  • 2 teaspoons vanilla extract
  • 3 to 4 tablespoons red food coloring gel
  • Optional: pinch of ground cinnamon or cayenne pepper
  • 8 oz (227 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup (175 g) white chocolate chips
  • ½ cup (120 ml) heavy cream
  • 1 tablespoon red food coloring gel
  • Optional: edible glitter or red sugar sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. Using an electric mixer, beat softened butter with granulated sugar until light and fluffy, about 4 minutes.
  4. Add eggs one at a time, beating well after each addition and scraping down the bowl.
  5. Add dry ingredients and buttermilk alternately in thirds, starting and ending with dry ingredients. Beat gently to combine.
  6. Divide batter evenly into four bowls. Leave one plain, add 1 tbsp red food coloring to second, 2 tbsp to third, and 3 tbsp to fourth. Stir each until fully blended.
  7. Layer each color into cake pans from lightest to darkest to create ombre effect. Bake 25-30 minutes or until toothpick comes out clean. Cool completely on racks.
  8. Beat cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla extract until fluffy. Chill briefly.
  9. Level cake layers if domed. Frost between layers and around cake with cream cheese frosting using an offset spatula. Chill cake for 20 minutes to set crumb coat.
  10. Heat heavy cream until hot but not boiling. Pour over white chocolate chips and let sit 2 minutes. Stir until smooth. Add red food coloring gel and mix well. Cool until thick but pourable.
  11. Using spoon or pastry bag, drip red glaze over cake edges, letting it cascade naturally. Refrigerate to set.
  12. Add edible glitter or red sugar sprinkles if desired for extra sparkle.

Notes

Use gel-based food coloring for best vibrant red without thinning batter. Chill cake between frosting layers to prevent crumbs. Adjust drip consistency by warming or cooling ganache. For gluten-free, substitute almond flour; for vegan, use flax eggs, dairy-free cream cheese, and plant-based butter.
