  • 8 ounces (225g) sharp cheddar cheese, freshly grated
  • ⅔ cup (160ml) beer (light lager or pilsner)
  • 4 ounces (113g) cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water (110°F) and a pinch of the sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until foamy.
  2. Make the dough: Add the remaining sugar, melted butter, and salt to the yeast mixture. Stir in the flour, one cup at a time, until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
  4. Prepare the baking soda bath: About 15 minutes before the dough is done rising, preheat the oven to 450°F (230°C). Line two baking sheets with parchment paper. In a large pot, bring 8-10 cups of water to a rolling boil. Carefully add the baking soda (it will bubble up), then reduce the heat to a simmer.
  5. Shape the pretzel bites: Punch down the risen dough and turn it out onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a long rope, about 1 inch thick, then cut into 1-inch pieces (about 50-60 total).
  6. Boil the pretzel bites: Working in batches of 8-10, drop the pretzel bites into the simmering baking soda bath. Boil for 30 seconds, flip, and boil for another 30 seconds. Remove with a slotted spoon and transfer to the prepared baking sheets, spacing about 1 inch apart.
