  • 1 teaspoon cinnamon
  • 1 cup (245g) pumpkin puree (100% pure pumpkin, not pie filling)
  • ½ cup (120ml) vegetable oil (canola or avocado oil work too)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ¼ cup (60ml) milk (dairy or non-dairy)
  • 1 cup (175g) semi-sweet chocolate chips
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper, leaving overhang on the sides.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon until no lumps remain.
  3. Make a well in the center of the dry ingredients. Add pumpkin puree, vegetable oil, eggs, vanilla extract, and milk. Stir until just combined; do not overmix. A few small lumps are fine.
  4. Gently fold in chocolate chips (reserve a handful for topping if desired). Batter will be thick and slightly glossy.
  5. Pour batter into prepared loaf pan and spread evenly. If reserved, press extra chocolate chips into the top.
  6. Bake on middle rack for 55-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly after 40 minutes, tent loosely with foil.
  7. Cool in pan for 10 minutes, then lift out using parchment and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

Do not overmix the batter to avoid dense bread. Use room temperature ingredients for best results. If pumpkin puree is watery, blot with a paper towel before adding. Let bread cool completely before slicing to prevent crumbling. For a lighter option, reduce oil to ⅓ cup and add ¼ cup applesauce.
