A healthier twist on classic meatloaf, made with ground turkey and rolled oats, topped with a sweet-tangy brown sugar glaze. Quick to prepare and perfect for weeknight dinners or meal prep.

  • 1 cup rolled oats
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 2 large eggs, lightly beaten
  • 1/3 cup milk (any kind)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon dried thyme
  • 1/2 cup ketchup
  • 1/4 cup brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F. Line a 9×5-inch loaf pan with foil or parchment paper, leaving overhang on sides.
  2. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, Dijon mustard, and garlic powder for the glaze. Set aside.
  3. Finely dice onion and mince garlic.
  4. In a large mixing bowl, stir together rolled oats, salt, black pepper, smoked paprika (if using), and dried thyme.
  5. Add diced onion, minced garlic, beaten eggs, milk, Worcestershire sauce, and tomato paste to the oat mixture. Stir until combined.
  6. Add ground turkey to the bowl. Using your hands, gently mix until just combined (about 30 seconds). Do not overmix.
  7. Transfer mixture to prepared loaf pan. Press gently to shape, slightly doming the top. Do not pack too tightly.
  8. Spread half of the glaze evenly over the top of the meatloaf.
  9. Place loaf pan on a baking sheet and bake for 45 minutes.
  10. After 45 minutes, remove meatloaf from oven. Spoon remaining glaze over the top and spread evenly.
  11. Return to oven and bake for another 15-20 minutes, until internal temperature reaches 165°F.
  12. Let meatloaf rest in the pan for 10-15 minutes before slicing.

Notes

Use 93/7 ground turkey for best moisture. Let eggs and milk come to room temperature before mixing. For extra crispy edges, shape as a free-form loaf on a lined baking sheet. The two-step glazing process prevents burning.
