These gooey, marshmallow-based popcorn balls studded with candy eyeballs are a quick and easy Halloween treat that kids love. They stay soft and chewy, making them a fun, crowd-pleasing snack for parties or spooky movie nights.

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels or one standard bag of microwave popcorn)
  • 1/4 cup unsalted butter
  • 1 (10-ounce) bag marshmallows (about 40 regular or 4 cups mini marshmallows)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup candy eyeballs (about 3040 pieces)
  • Optional: orange or black sprinkles, edible glitter, or colored sugar

Instructions

  1. Pop your popcorn and let it cool completely. Spread on a baking sheet to cool for about 10 minutes, removing any unpopped kernels.
  2. Line your work surface with parchment paper or wax paper, lightly greased with butter or cooking spray.
  3. Melt the butter in a medium saucepan over low heat. Add the marshmallows and stir constantly until completely melted and smooth, about 5-7 minutes.
  4. Remove from heat and stir in the vanilla extract and salt until combined.
  5. Pour the marshmallow mixture over the cooled popcorn and gently fold with a rubber spatula until every piece is coated.
  6. Let the mixture cool for 2-3 minutes until warm but not scalding.
  7. Grease your hands lightly with butter or cooking spray. Grab handfuls of the mixture (about tennis ball size) and gently press into round shapes. Place on prepared parchment paper.
  8. While still warm and sticky, press 2-3 candy eyeballs into each popcorn ball. Add optional sprinkles if desired.
  9. Let the popcorn balls set completely for 20-30 minutes before serving.

Notes

Work quickly once marshmallow is mixed in, as it sets fast. If mixture becomes too cool to shape, reheat gently. For dairy-free, use plant-based butter. For vegan, use vegan marshmallows and plant-based butter. Store in an airtight container at room temperature for up to 3 days; do not refrigerate. Can be frozen for up to 2 months.
