  • 1 pound (450g) ground turkey (93/7)
  • 3/4 cup plain unseasoned breadcrumbs
  • 1/4 cup whole or 2% milk
  • 1/2 cup grated yellow onion (from about half an onion)
  • 3 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup packed brown sugar (light or dark)
  • 1/4 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the sides.
  2. In a small bowl, combine 3/4 cup breadcrumbs with 1/4 cup milk. Let sit for 5 minutes until the breadcrumbs absorb the milk and form a paste.
  3. Grate half a yellow onion on the large holes of a box grater to get about 1/2 cup of grated onion (including juices).
  4. In a large mixing bowl, combine the ground turkey, soaked breadcrumb mixture, grated onion, minced garlic, beaten egg, 2 tablespoons Worcestershire sauce, Dijon mustard, olive oil, salt, pepper, and dried thyme. Mix gently with your hands until just combined (about 30 seconds). Do not overmix.
  5. Transfer the mixture to the prepared loaf pan. Gently press into an even shape, avoiding air pockets. Do not pack too firmly.
  6. In a small saucepan over medium heat, combine brown sugar, ketchup, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder. Whisk until sugar dissolves and mixture is smooth, about 2-3 minutes. Bring to a gentle simmer, then remove from heat.
  7. Pour about half the glaze over the meatloaf and spread evenly. Reserve the remaining glaze.
  8. Place the loaf pan on a baking sheet and bake for 40 minutes.
  9. Remove from oven and pour the remaining glaze over the top. Spread evenly. Return to oven and bake for another 10-15 minutes.
  10. Check internal temperature with a meat thermometer; it should read 165°F (74°C) in the center. If not, bake 5 more minutes and check again.
  11. Let the meatloaf rest in the pan for 10 minutes. Then lift out using parchment overhang and transfer to a cutting board. Rest another 5 minutes before slicing.
  12. Slice into 1-inch thick slices and serve warm.

Notes

Don’t use 99% lean turkey; 93/7 is best for moisture. Grate the onion instead of chopping for better moisture distribution. Let the breadcrumbs soak for 5 minutes before mixing. Use a meat thermometer to avoid overcooking. Let the meatloaf rest for at least 10 minutes before slicing. Double the glaze for extra to drizzle over sides.
