These fudgy brownies feature a rich chocolate flavor with a soft center and slightly crisp top, making them a beloved treat perfect for bake sales and gatherings.

Ingredients

Scale
  • 1 cup (227 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup (75 g) unsweetened cocoa powder, preferably Dutch-processed
  • 1 cup (125 g) all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1/2 cup (90 g) semi-sweet or bittersweet chocolate chips or chunks (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper, leaving some overhang.
  2. Melt the butter and chocolate together in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth and glossy (about 2-3 minutes).
  3. Transfer the melted mixture to a large mixing bowl. Whisk in the sugar until combined and slightly glossy.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, sift together the cocoa powder, flour, and salt.
  6. Gently fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  7. Fold in chocolate chips if using.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick near the center; it should have a few moist crumbs but no wet batter.
  10. Let brownies cool completely in the pan on a wire rack before slicing.

Notes

Do not overbake to keep brownies fudgy; use quality Dutch-processed cocoa powder for best flavor. Let brownies cool completely before slicing for cleaner cuts. For gluten-free, substitute almond flour; for dairy-free, use coconut oil and dairy-free chocolate chips. Adding a tablespoon of instant espresso powder can intensify chocolate flavor.
