Ingredients

  • Apple Cider Vinegar (unfiltered, with the mother) – enough to fill a 32-ounce jar
  • Fresh Ginger Root – 4-inch piece, sliced thin
  • Fresh Turmeric Root (or 1 tablespoon ground) – 4-inch piece, sliced thin
  • Horseradish Root – 2-inch piece, peeled and sliced
  • One Medium Yellow Onion – quartered and thinly sliced
  • One Head of Garlic – cloves crushed and sliced
  • One Jalapeño or Habanero Pepper (optional, for extra heat) – sliced
  • Raw Honey (local is best) – ¼ cup, or to taste
  • Optional: Cinnamon stick, black peppercorns, fresh rosemary sprig

Instructions

  1. Prepare Your Ingredients: Scrub all produce. Peel horseradish and turmeric. Slice ginger and turmeric into ¼-inch coins. Quarter onion and slice thinly. Crush garlic cloves and slice. Peel and slice horseradish into thin matchsticks. Slice jalapeño into rings.
  2. Layer Everything in the Jar: Place harder roots (ginger, turmeric, horseradish) at the bottom of a clean 32-ounce glass jar, then onion and garlic, and jalapeño on top. Fill jar about three-quarters full.
  3. Add the Honey: Pour raw honey over the layered ingredients.
  4. Pour in the Apple Cider Vinegar: Slowly pour apple cider vinegar over everything until jar is completely full, ensuring all solids are submerged. Use a chopstick to release air bubbles.
  5. Seal and Shake: Screw lid on tightly and shake well. Honey will dissolve over the next few days.
  6. Steep: Place jar in a cool, dark place for at least 2 weeks, preferably 4 weeks. Shake vigorously once a day.
  7. Taste Test: After 2 weeks, taste the cider. It should be pungent, spicy, tangy, and pleasantly sweet. If too sharp, let it steep longer.
  8. Strain: Place a fine-mesh strainer lined with cheesecloth over a large bowl. Pour contents through strainer. Let drip, then squeeze cheesecloth to extract all liquid.
  9. Bottle and Store: Use a funnel to pour strained fire cider into clean bottles or jars. Seal tightly and store in the refrigerator for up to 6 months.

Notes

Do not skip the daily shake; it helps the honey dissolve and ensures even extraction. Use a plastic lid or wax paper between the jar and metal lid to prevent corrosion. The strained solids can be dehydrated and ground into a spice powder. Start with a small amount (1 ounce) daily to see how your body reacts.
