  • 4 salmon fillets, 6 ounces each, skin-on, preferably wild-caught
  • 1 large head broccoli or about 4 cups florets (150g), fresh and firm
  • 3 tablespoons honey, raw or local
  • 3 cloves garlic, minced fresh
  • 2 tablespoons soy sauce, low sodium if possible
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • Black pepper, freshly ground, to taste
  • Red pepper flakes, optional, a pinch
  • Salt, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut broccoli into bite-sized florets about 1½-inch pieces (4 cm). Dry thoroughly.
  3. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, and lemon juice until smooth. Add red pepper flakes if desired.
  4. Toss broccoli florets with a drizzle of olive oil, salt, and black pepper on a lined baking sheet.
  5. Place salmon fillets skin-side down on one side of the baking sheet, pushing broccoli to the other side. Pat salmon dry with paper towels.
  6. Brush honey garlic glaze generously over salmon fillets, coating tops and sides. Reserve a small amount of glaze for basting.
  7. Roast in the oven for 12-15 minutes depending on thickness. Halfway through (about 7 minutes), brush salmon with reserved glaze and gently toss broccoli to promote even roasting.
  8. Check salmon for doneness; it should flake easily and reach an internal temperature of 145°F (63°C). Broccoli edges should be golden and slightly crisp.
  9. Remove from oven and let salmon rest for a couple of minutes before serving.

Notes

Use fresh minced garlic for best flavor. Pat salmon dry before glazing to help glaze stick. Toss broccoli halfway through roasting for even crispiness. Use a meat thermometer to avoid overcooking salmon. For extra crispiness, broil for 1-2 minutes at the end but watch closely to prevent burning. Leftovers keep well refrigerated for up to 2 days and reheat gently.
