  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 cup (240g) Greek yogurt, full fat or 2%
  • 1/2 cup (60g) cucumber, finely grated and squeezed dry
  • 12 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste
  • 1 cup cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or mint for garnish

Instructions

  1. In a medium bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Add chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  2. Grate cucumber and squeeze out excess moisture. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Stir well and refrigerate until ready to serve.
  3. Rinse 1/2 cup dry quinoa under cold water. Combine with 1 cup water in a pot, bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until water is absorbed and quinoa is fluffy. Fluff with a fork and set aside.
  4. Heat skillet or grill pan over medium-high heat. Remove chicken from marinade and cook 5-7 minutes per side until internal temperature reaches 165°F (74°C) and chicken is golden brown. Let rest 5 minutes before slicing.
  5. While chicken cooks, halve cherry tomatoes, dice cucumber, thinly slice red onion, and pit and halve Kalamata olives if using.
  6. Assemble bowl with quinoa base, sliced chicken on top, then scatter tomatoes, cucumber, onion, and olives. Drizzle or dollop with tzatziki, sprinkle with feta and fresh herbs. Serve immediately or pack for meal prep.

Notes

Marinate chicken for at least 30 minutes to tenderize and infuse flavor. Squeeze cucumber thoroughly to avoid watery tzatziki. Use a meat thermometer to avoid overcooking chicken. Store components separately for best freshness when meal prepping.
