A quick and easy summer treat featuring thick watermelon slices topped with creamy yogurt, fresh berries, and a hint of mint. This no-bake recipe is refreshing, colorful, and perfect for hot days.

Ingredients

Scale
  • 1 medium seedless watermelon, cut into 1-inch thick rounds
  • 1 cup Greek yogurt (full-fat or 2%)
  • 12 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries (blueberries, sliced strawberries, raspberries)
  • A handful fresh mint leaves, chopped or torn
  • 1 teaspoon lime zest (optional)
  • Chia seeds or crushed nuts (optional, e.g., sliced almonds or chopped pistachios)

Instructions

  1. Slice the watermelon into 1-inch thick rounds using a sharp knife. Trim the rind off each round carefully, then cut each round into 6 to 8 wedges depending on size.
  2. In a medium bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until smooth and creamy. Adjust sweetness if needed.
  3. Lay the watermelon wedges on a serving platter. Spread a generous layer of the creamy yogurt mixture over each wedge.
  4. Scatter blueberries, sliced strawberries, and raspberries evenly over the yogurt-topped watermelon wedges.
  5. Sprinkle chopped fresh mint leaves and optional lime zest over the top. Add chia seeds or crushed nuts if desired.
  6. Chill for 15 minutes if preferred to let flavors meld and watermelon cool, or serve immediately.

Notes

Pat watermelon slices dry with a paper towel before spreading yogurt to prevent sogginess. Use a light hand when spreading yogurt to avoid breaking the watermelon wedges. Serve fresh or chill briefly; avoid storing assembled pizza for long to maintain texture. For dairy-free or vegan versions, substitute Greek yogurt with coconut or almond yogurt and honey with maple syrup.
