A quick and refreshing summer salad combining sweet watermelon, salty feta, fresh mint, and tangy balsamic glaze for a perfect balance of flavors and textures.

Ingredients

  • Seedless watermelon, cut into bite-sized cubes
  • Feta cheese, crumbled (about 1 cup or 150 g)
  • Fresh mint leaves, roughly chopped (about 1/4 cup or 10 g)
  • Balsamic glaze (store-bought or homemade)
  • Extra virgin olive oil, 1 tablespoon
  • Freshly ground black pepper, about 1/4 teaspoon
  • Sea salt flakes, optional

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes.
  2. Rinse fresh mint leaves, pat dry, remove from stems, and roughly chop.
  3. Place watermelon cubes in a large bowl. Add crumbled feta cheese and sprinkle chopped mint over the top.
  4. Drizzle 1 tablespoon of extra virgin olive oil over the mixture.
  5. Slowly drizzle 2 tablespoons of balsamic glaze in a decorative pattern.
  6. Add freshly ground black pepper to taste and sprinkle sea salt flakes sparingly if desired.
  7. Gently toss the salad using two large spoons to distribute ingredients without crushing the watermelon or feta.
  8. Serve immediately or cover and refrigerate for up to 1 hour. Stir gently before serving if chilled.

Notes

Use a ripe watermelon for best sweetness and firmness. Add balsamic glaze slowly to avoid overpowering the salad. Keep feta cold and crumble just before tossing. Chop mint just before serving to preserve freshness. If making balsamic glaze at home, simmer balsamic vinegar until thickened. Store leftovers covered in the fridge up to 24 hours and drain excess liquid before serving.
