  • 4 cups watermelon, cubed (firm, seedless)
  • 1 cup feta cheese, crumbled (preferably block-style)
  • 1/4 cup fresh mint leaves, roughly chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup (optional)
  • Pinch of salt
  • Pinch of freshly ground black pepper

Instructions

  1. Cut about 4 cups (roughly 600g) of watermelon into bite-sized cubes, avoiding overripe spots.
  2. Rinse fresh mint leaves, pat dry, remove from stems, and roughly chop.
  3. In a small bowl or jar, combine lime juice, extra virgin olive oil, honey or agave syrup (if using), salt, and black pepper. Whisk or shake vigorously until emulsified.
  4. In a medium mixing bowl, add watermelon cubes, crumbled feta, and chopped mint. Pour dressing over and gently toss to combine without mashing the watermelon.
  5. Taste and adjust seasoning by adding more honey or lime juice if needed.
  6. Optional: Refrigerate the salad for 15-20 minutes before serving to let flavors meld.
  7. Garnish with whole mint leaves or a lime wedge and serve chilled or at room temperature.

Notes

Keep the dressing separate until just before serving to prevent the watermelon from becoming soggy. Use fresh lime juice for best flavor. Be gentle when tossing to avoid bruising the watermelon. For a dairy-free version, substitute feta with firm tofu or nut-based cheese alternatives.
