  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 10 to 12 fresh mint leaves, washed and gently muddled
  • 2 cups (480 ml) cold water
  • 1 to 2 tablespoons sugar or simple syrup (optional)
  • Ice cubes for serving

Instructions

  1. Cube the watermelon into medium-sized chunks (about 6 cups or 900g).
  2. Place the watermelon cubes into a blender and pulse until smooth, about 1 to 2 minutes.
  3. Strain the blended watermelon through a fine mesh strainer or cheesecloth into a large bowl or pitcher to remove pulp and seeds, pressing gently to extract juice.
  4. Squeeze fresh lime juice from 2 medium limes (about 3 tablespoons or 45 ml).
  5. Lightly muddle 10 to 12 fresh mint leaves to release essential oils without tearing the leaves.
  6. Combine the watermelon juice, lime juice, muddled mint leaves, and 2 cups (480 ml) cold water in a pitcher.
  7. Taste and add 1 to 2 tablespoons sugar or simple syrup if needed, stirring until dissolved.
  8. Refrigerate the agua fresca for at least 30 minutes to let flavors meld and mint infuse.
  9. Serve chilled over ice cubes, garnished with a lime wedge or fresh mint sprig if desired.

Use ripe, fragrant watermelon for the best flavor. Straining is optional but recommended for a smooth texture. Muddle mint gently to avoid bitterness. Consume within 24 hours for optimal freshness.
